List of ingredients you’ll need:
· 60g Plain Flour
· 600g Custard Powder
· 170g Margarine
· 1 Egg Yolk
· Vanilla Essence
· 7 Fresh Eggs
· 170g White Sugar
· 240g UHT Fresh Milk
· 1 bottle Bird’s Nest
1) Making the Dough
Combine plain flour, custard powder, margarine, egg yolk and vanilla essence in sequence in a mixing bowl. Knead the mixture into a smooth dough.
2) Moulding
Next, portion out the smooth dough into 20 separate dough balls and press each dough ball evenly into the tart mould.
3) Preparing of the Mixture
Combine fresh eggs, white sugar, and fresh milk in a separate mixing bowl. Beat them together and strain the mixture. Then proceed to pour the egg custard filling up to 80% full respectively into each mould.
4) Baking
Preheat your oven at top heat 160°C, bottom heat 300°C and set your timer to bake the tarts for 7 minutes. Once the time is up, take out the egg tarts and let it cool down for a while.
5) Cooling Down
After it is cooled down, pour Bird’s Nest on top of the custard and it is now ready to be served!
#2: Mango Pudding with Bird’s Nest Sago (Approx. 10 servings)
List of ingredients you’ll need:
· 1 cup Mango Puree
· 1 cup + ⅓ cup Coconut/Evaporated Milk
· ½ cup Sugar
· ½ cup Hot Water
· 1 tbsp Gelatin Powder (Unflavoured)
· ½ cup Diced Fresh Mango
· ½ cup Sago Pearls
· 2 bottles Bird’s Nest
· 1 litre Water
1) Making the Mixture
In a small bowl, mix gelatin and hot water until there are no visible lumps. After mixing, transfer the mixture to a larger bowl – along with mango puree, 1 cup of coconut milk, salt, and sugar. Then, stir till the mixture is smooth.
2) Chilling and Setting
Next, pour the mixture into small pudding cups/containers of your choice to let it set in the fridge for 3 hours minimum.
3) Preparing the Topping
For the sago topping, bring ½ cup of sago pearls and 1 litre of cold water to boil in a saucepan. Reduce the heat to medium heat and keep stirring so that they will not stick to the bottom of the pan. Make sure to cook the sago pearls until they become transparent, for roughly 12-15 minutes.
Once it is cooked, remove the saucepan from heat and strain the sago pearls. Next, wash the pearls in cold water to remove excess starch, and add it into a clean bowl. Mix the cooked sago pearls with Bird’s Nest and stir gently.
4) Assembling the Pudding
After the pudding is set, remove it from the fridge and start assembling the pudding. Add 1 tbsp of coconut milk on top of the pudding, and add one tsp of the sago-bird’s nest mixture. To complete the pudding, top it off with some mango cubes, and more sago-bird’s nest mixture before serving. Now it’s ready to enjoy!
#3: Matcha Fresh Milk with Bird’s Nest Jelly (Approx. 1 serving)
List of ingredients you’ll need:
· 2 tsp Matcha Powder
· 1 cup Cold Water
· 1 cup Fresh Milk
· 1 bottle Bird’s Nest
· ½ tbsp Gelatin Powder (Unflavoured)
· ½ tbsp Hot Water
· Ice
1) Making the Jelly
Start by mixing the gelatin powder and hot water in a small saucepan until there are no lumps remaining. Add 1 bottle of Bird’s Nest into the mixture and gently stir. Proceed to combine the bird’s nest and gelatin mixture into a glass, and let it set in the refrigerator for at least 2 hours.
2) Preparing the Matcha Drink
When making the matcha element, mix 1-2 tsp of matcha powder with one cup of cold water. Alternatively, a cocktail shaker can be used for convenience. Once completed, set it aside.
3) Assembling
Next, remove the set jelly from the fridge. Pour one cup fresh milk on top and add ice if you prefer it chilled.
